Scottish Gin Club - Lind & Lime Gin - July 2019

This month our Scottish Gin Club members are enjoying the delightfully refreshing Lind & Lime Gin from the Port of Leith Distillery – the perfect G&T for a summer evening.

Port of Leith Distillery

Established by two friends in 2017, Port of Leith Distillery is situated just a stone's throw from the docks where for many centuries a vast array of goods came into Scotland including spices, botanicals and spirits including Jenever from Holland and rum from the Caribbean.

Currently based in the Tower Street Still House which is shared with another of Leith's favourite small batch gins (Electric Spirit Co.) but 2019 will see the start of construction of the new, purpose-built Port of Leith Distillery which will be over 5 floors and will become Scotland's first vertical distillery.

Lind & Lime Gin

Lind & Lime Gin is a nod to one of Leith's historical maritime figures and the Port of Leith's ties as one of Scotland's most important trading ports.

James Lind was an Edinburgh born Ship’s Surgeon aboard the HMS Salisbury. It was on this vessel that he conducted what is recognised today as one of the first clinical trials ever recorded. Scurvy was rife at the time due to a lack of Vitamin C and Lind carried out a number of trials that showed citrus fruit improved the sailor’s health. Although Lind missed the significance of this observation, he is recognised for pioneering the concept of a ‘fair trial’ with a preference for observation over theory that set him apart from other practitioners of his era.

The stunning bottle is a celebration of the area's links to wine which arrived at the port for many centuries and was the catalyst for glass production in the area. Each bottle is stamped with Leith Glass Works on the base.

Tasting Notes

Lind & Lime is a deliciously complex, dry and refreshing gin that is made using seven botanicals including fresh lime rind which has been counterbalanced by a touch of spice from pink peppercorns.

Perfect Serve

We recommend serving over plenty of ice with a premium, classic tonic. We have paired with Bon Accord's Light Tonic as we find the flavours complement each other very well and botanicals in the gin really shine through. Finish with a good wedge of juicy lime.

To complement the summery and citrus notes of the gin, our chocolatier has made tangy lemon and fluffy marshmallow bars in zephyr white chocolate - it's a match made in chocolate and gin heaven!
