Port of Leith Distillery - Oloroso Sherry
The Port of Leith Distillery in Edinburgh will be using casks seasoned with sherry from Bodegas Barón to mature its whisky. While we are waiting for the whisky to age we're being given a taste of the sherry.
Bodegas Barón is a 480 year old producer with a very modern outlook. The un-matured version of the Oloroso wine will be used to season oak casks in Sanlúcar de Barrameda, in the heart of Jerez in South West Spain, before they are shipped to Scotland to fill them with whisky.
The sherry has a classic fruity character.
