Opened in 2019, Holyrood Distillery is the first whisky distillery to operate in the centre of Edinburgh for almost 100 years. It is the brainchild of Canadians Rob and Kelly Carpenter along with whisky industry veteran David Robertson. The trio share a love and passion for Edinburgh, Scotch whisky and a challenge! The founders had a vision to create a distillery that would reflect the dynamism and diversity of present-day Edinburgh. They have married craft traditions with bold new approaches to flavour. Holyrood Distillery has been built in an old train shed at the foot of Arthur's Seat and also includes a visitor experience. While their own whisky is maturing the distillery is focussed on producing a range of gins as well as releasing blended malts to preview the styles they are looking to create. An exciting range of Holyrood Gins and liqueurs have also been released.
