The challenge when making Height of Arrows for Holyrood Distillery was whether they could make a gin with a whisky maker's mindset.

Whisky’s vast array of flavours rely on distillers’ expertise in using just three ingredients, water, malted barley and yeast. In creating Height of Arrows, the distillers sought to create a gin that followed the same principle of utilising a few ingredients to achieve an abundance of flavour.

Height contains just three ingredients, juniper, Isle of Skye sea salt and natural beeswax.

Tasting Notes

NOSE A balanced presentation of clean fresh pine & resin coupled with light citrus zest. PALATE Initially oily and mouth coating with juicy and rich orange zest and lemon pith then a bold emergence of black pepper and cardamom, tempered with tapered herbaceous smoothness. FINISH Long, smooth and dry finish with effervescent spicy notes.

The perfect serve

We think the Dry Gin is best served as a classic G&T with ice, a quality tonic and a wedge of lime.

Meet the maker

Opened in 2019, Holyrood Distillery is the first whisky distillery to operate in the centre of Edinburgh for almost 100 years. It is the brainchild of Canadians Rob and Kelly Carpenter along with whisky industry veteran David Robertson. The distillery has been built in an old train shed at the foot of Arthur's Seat and also includes a visitor experience. While their own whisky is maturing the distillery is focussed on producing a range of gins as well as releasing blended malts to preview the styles they are looking to create.
